Tender, buttery potatoes with smoky kielbasa and sweet onions coated in savory cooking juices!

🛒 INGREDIENTS
- 2 lb (900 g) potatoes, peeled and diced into ¾-inch (2 cm) cubes
- 1 lb (450 g) fully cooked smoked kielbasa, sliced into ½-inch (1 cm) coins
- 1 large onion, sliced
- 4 tablespoons (56 g) butter, cut into four pats
- ½ cup (120 ml) chicken broth
- 1 teaspoon salt
- ½ teaspoon black pepper
👩🍳 INSTRUCTIONS
1️⃣ ADD THE POTATOES AND ONION
Place the diced potatoes and sliced onion in the bottom of a 6-quart slow cooker.
2️⃣ SEASON
Sprinkle the salt and black pepper over the vegetables. Stir gently to distribute the onions and seasoning evenly.
3️⃣ ADD THE KIELBASA
Scatter the kielbasa coins over the potatoes and onions.
4️⃣ ADD THE BUTTER AND BROTH
Place the four butter pats over the ingredients. Pour the chicken broth gently around the sides.
5️⃣ SLOW COOK
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are easily pierced with a fork. Cooking time may vary depending on your slow cooker and the size of the potato cubes.
6️⃣ STIR AND SERVE
Gently stir everything together so the potatoes and kielbasa are coated in the buttery juices. Spoon onto plates and serve warm.
💡 TIP
Yukon Gold or red potatoes hold their shape well during slow cooking. Cut the cubes evenly so they finish cooking at the same time.
