Ingredients

  • 2 lbs breakfast sausage (use your favorite chicken, turkey, or plant-based variety)
  • 16 oz cream cheese, softened
  • 8 large eggs
  • 2 cups milk (whole milk recommended)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

Other Ingredients:

  • 1 (30 oz) bag frozen shredded hashbrowns, thawed
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Optional: chopped fresh chives or parsley for garnish

Instructions

  1. Preheat Oven
    Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook the Sausage
    In a large skillet over medium heat, cook the sausage until fully browned and crumbled. Drain any excess fat.
  3. Stir in Cream Cheese
    Lower the heat and stir the softened cream cheese into the sausage. Mix until smooth and well combined. Remove from heat.
  4. Prepare Egg Mixture
    In a mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.
  5. Assemble the Casserole
    Spread the thawed hashbrowns evenly in the prepared baking dish. Top with the sausage and cream cheese mixture. Pour the egg mixture evenly over the top. Sprinkle shredded cheese across the entire surface.
  6. Bake
    Bake uncovered for 45–50 minutes, or until the center is fully set and the top is golden brown. A knife inserted into the middle should come out clean.
  7. Rest and Serve
    Let the casserole cool for 10 minutes before slicing. Garnish with fresh herbs if desired.
