Crockpot Meatloaf with Potatoes and Veggies 🍖🥔🥕
Ingredients
For the meatloaf:
2 lb ground beef
1 cup breadcrumbs
2 large eggs
1/2 cup milk
1 small onion, finely chopped
1 tsp garlic powder
1 tsp salt
1/2 tsp black pepper
For the glaze:
1/2 cup ketchup
2 tbsp brown sugar
1 tsp mustard
For the vegetables:
1 lb baby potatoes, halved
3 carrots, sliced
2 cups green beans
1 tbsp olive oil
Salt and pepper to taste
1/4 cup beef broth
Instructions
Mix the ground beef, breadcrumbs, eggs, milk, onion, and seasonings in a large bowl.
Shape the mixture into a loaf.
Place the potatoes and carrots in the bottom of the slow cooker. Add the beef broth and arrange the meatloaf on top. Add the green beans later if you prefer them firmer.
Mix the ketchup, brown sugar, and mustard. Spread the glaze over the meatloaf.
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the center reaches 160°F (71°C). Check that the vegetables are tender and the meatloaf is fully cooked.
Add the green beans during the final 1–2 hours on LOW or 30–60 minutes on HIGH, depending on their size and desired tenderness.
Carefully remove the meatloaf, rest for 5–10 minutes, slice, and serve with the vegetables.
Enjoy this easy, hearty family dinner! ❤️
