Ingredients

  • 200g (7 oz) cream cheese, softened
  • 50g (3 tbsp) unsalted butter, softened
  • 100ml (7 tbsp) milk
  • 4 large eggs, separated
  • 70g (⅓ cup) granulated sugar
  • 40g (⅓ cup) cake flour
  • 10g (1 tbsp) cornstarch
  • 1 tsp vanilla extract
  • Pinch of salt (optional)

Instructions

Step 1: Prepare the Oven

  1. Preheat your oven to 150°C (300°F).
  2. Line the bottom of an 8-inch (20 cm) round cake pan with parchment paper.
  3. Wrap the outside of the pan with aluminum foil if using a water bath.

Step 2: Make the Cream Cheese Mixture

  1. In a saucepan over low heat, combine the cream cheese, butter, and milk.
  2. Stir continuously until smooth and creamy.
  3. Remove from heat and let cool slightly.

Step 3: Add the Egg Yolks

  1. Add the egg yolks one at a time, whisking well after each addition.
  2. Stir in the vanilla extract.

Step 4: Add the Dry Ingredients

  1. Sift together the cake flour and cornstarch.
  2. Fold them into the cream cheese mixture until smooth and lump-free.

Step 5: Prepare the Meringue

  1. In a clean bowl, beat the egg whites until foamy.
  2. Gradually add the sugar while beating.
  3. Continue beating until soft-to-medium peaks form.

Step 6: Combine the Mixtures

  1. Fold one-third of the meringue into the batter to lighten it.
  2. Gently fold in the remaining meringue in two additions.
  3. Mix carefully to keep as much air as possible in the batter.

Step 7: Bake

  1. Pour the batter into the prepared cake pan.
  2. Place the pan inside a larger baking dish.
  3. Fill the larger dish with hot water to create a water bath.
  4. Bake for 60–70 minutes, or until the cake is lightly golden and set in the center.

Step 8: Cool

  1. Turn off the oven and leave the cake inside with the door slightly open for 15 minutes.
  2. Remove from the oven and allow it to cool completely.
  3. Refrigerate for at least 2 hours before serving for the best texture.
