⏱️ Prep Time: 10 minutes
🔥 Cook Time: 5–6 hours on LOW or about 3 hours on HIGH
🍽 Servings: 6–8

🛒 Ingredients

  • 1 bag (32 oz / 907 g) frozen diced hash brown potatoes
  • 1 lb (450 g) fully cooked kielbasa, sliced into rounds
  • 1 small yellow onion, finely diced
  • 2½ cups (280 g) shredded cheddar cheese, divided
  • 1 can (10.5 oz / 298 g) condensed cream of chicken soup
  • 1 cup (240 ml) whole milk
  • ½ cup (113 g) unsalted butter, melted
  • 1 tsp black pepper
  • ½ tsp onion powder

👩‍🍳 Instructions

  1. ADD THE POTATOES
Place the frozen diced hash browns evenly in the slow cooker.
  2. ADD THE KIELBASA
Add the sliced kielbasa over the potatoes.
  3. ADD THE ONION
Sprinkle the diced onion evenly over everything.
  4. ADD THE CHEESE
Add about 2 cups of the shredded cheddar, reserving the remaining cheese for the top.
  5. MAKE THE CREAMY MIXTURE
In a separate bowl, combine the cream of chicken soup, milk, melted butter, black pepper, and onion powder until smooth.
  6. ADD THE SAUCE
Pour the creamy mixture evenly over the potatoes and kielbasa.

Gently combine everything until evenly coated.

  1. SLOW COOK
Cover and cook on LOW for 5–6 hours or HIGH for about 3 hours, until the potatoes are tender and the casserole is hot and creamy.
  2. ADD THE FINAL CHEESE
Sprinkle the remaining cheddar evenly over the top.

Cover again for about 10–15 minutes, just until the cheese is completely melted.

  1. SERVE
Serve hot while creamy and cheesy.

💡 TIP:
Keep the kielbasa slices fairly thick so they stay juicy and clearly visible in the finished casserole.
