⏱️ Prep Time: 15 minutes
🔥 Cook Time: Approximately 8–9 hours on LOW or 5–6 hours on HIGH
🍽 Servings: 4
🛒 Ingredients
- 2 lb (900 g) RAW boneless beef chuck, fully thawed, trimmed of excess fat, and cut into 1½-inch (4 cm) chunks
- 1 lb (450 g) carrots, peeled and cut into thick 1-inch (2.5 cm) pieces
- 1 medium yellow onion, finely chopped into small, thin pieces approximately ¼ inch (5–6 mm)
- 4 garlic cloves, crushed into a smooth paste
- Salt, to taste
- Finely ground black pepper, to taste
- ¾ cup (180 ml) nonalcoholic, unfiltered apple cider
- ½ cup (120 ml) beef broth
- 1 tablespoon (15 ml) Worcestershire sauce
👩🍳 Instructions
1️⃣ ADD THE VEGETABLES
Spread the carrot pieces evenly across the bottom of the slow cooker. Scatter the finely chopped onion over the carrots.
2️⃣ ADD THE BEEF
Arrange the raw beef chuck chunks over the vegetables.
3️⃣ MIX AND ADD THE SEASONING
Mix the salt and black pepper together in a small bowl, then sprinkle the mixture evenly over the beef. Season lightly, as the broth and Worcestershire sauce already contain salt.
4️⃣ ADD THE CRUSHED GARLIC
Spoon the smooth garlic paste over the beef.
5️⃣ ADD THE APPLE CIDER
Pour the measured apple cider over the beef and vegetables.
6️⃣ ADD THE REMAINING LIQUIDS
Pour the beef broth gently around the inside edges. Then drizzle the Worcestershire sauce over the beef. Add the liquids separately, without premixing or stirring inside the slow cooker.
7️⃣ COVER AND COOK
Cover and cook on LOW for approximately 8–9 hours or HIGH for 5–6 hours, until the beef separates easily with a fork, the carrots are tender, and the onion pieces are soft. If the beef is still firm, continue cooking covered until tender.
8️⃣ SERVE
Gently stir the cooking broth and taste, adjusting the seasoning if needed. Serve the beef chunks, carrots, and softened onion pieces with a little broth spooned over the top.
💡 Tip:
Use nonalcoholic, unfiltered apple cider—the cloudy apple juice sold as cider in the US. The finished broth will be naturally light and pourable.
