Ingredients

  • 1½ pounds smoked beef sausage, sliced into rounds
  • 1½ pounds baby potatoes, halved or quartered
  • 1 pound fresh green beans, trimmed
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon salt, or to taste
  • ½ cup beef broth
  • ½ cup shredded cheddar cheese (optional)
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

1. Preheat the oven. Heat the oven to 400°F (200°C). Lightly grease a 9 × 13-inch baking dish.

2. Prepare the vegetables. Wash the potatoes and green beans. Cut the potatoes into evenly sized pieces, trim the green beans, and chop the onion.

3. Brown the beef sausage. Heat a large skillet over medium-high heat. Add the sliced beef sausage and cook for 3–4 minutes, turning occasionally, until lightly browned. This adds extra smoky flavor.

4. Season the potatoes and vegetables. In a large bowl, combine the potatoes, green beans, onion, and minced garlic. Add the olive oil, melted butter, Italian seasoning, smoked paprika, garlic powder, salt, and black pepper. Toss until everything is evenly coated.

5. Assemble the bake. Transfer the vegetables to the prepared baking dish. Arrange the browned beef sausage evenly over the top.

6. Add the broth. Pour the beef broth around the vegetables to help them cook and create flavorful juices.

7. Cover and bake. Cover the dish tightly with aluminum foil and bake for 35 minutes.

8. Finish baking. Carefully remove the foil, stir the ingredients gently, and bake uncovered for another 20–30 minutes, or until the potatoes are fork-tender and the green beans are cooked to your liking.

9. Add cheese if desired. Sprinkle shredded cheddar over the top during the last 5 minutes of baking. Return the dish to the oven until the cheese melts.

10. Garnish and serve. Sprinkle with fresh parsley and serve warm, spooning the buttery juices over the sausage and vegetables.

Tips for the Best Results

  • Choose the right potatoes: Baby Yukon Gold or red potatoes hold their shape and become tender and creamy.
  • Don’t skip browning: Searing the sausage first gives the dish a deeper, richer flavor.
  • Cut evenly: Similar-sized potato pieces help everything cook at the same rate.
  • Use canned green beans if needed: Drain them well and add them during the last 20 minutes so they don’t become overly soft.
  • Make it spicy: Add ¼ teaspoon red pepper flakes.
  • Check for doneness: The potatoes should be easily pierced with a fork before serving.

Storage and Reheating

  • Refrigerator: Store leftovers in an airtight container for up to 4 days.
  • Reheating: Warm in a covered oven-safe dish at 350°F (175°C) until heated through, or microwave individual portions.
  • Freezing: Freeze cooled portions in airtight containers for up to 2 months. The potatoes and green beans may soften after thawing.
