⏱️ Prep: 10 minutes | Cook: 20–25 minutes
🍽 Servings: 4
INGREDIENTS
For the steak:

  • 4 boneless beef tenderloin steaks, about 8 oz (225 g) each and 1½ inches (4 cm) thick
  • 1 tbsp avocado oil or another high-heat cooking oil
  • ¾ tsp fine salt
  • ½ tsp freshly ground black pepper
For the lemon herb butter sauce:
  • 6 tbsp (85 g) unsalted butter, divided
  • 4 garlic cloves, finely minced
  • ⅓ cup (80 ml) low-sodium beef broth
  • 1 tbsp fresh lemon juice, plus more to taste
  • ½ tsp finely grated lemon zest
  • 2 tbsp chopped fresh parsley
  • 1 tsp fresh thyme leaves
  • 4 thin lemon slices, halved
  • Salt and black pepper, to taste
    INSTRUCTIONS
    1️⃣ Prepare the steaks
Preheat the oven to 400°F (200°C). Pat the steaks thoroughly dry, then season all over with salt and pepper.
    2️⃣ Sear
Heat the oil in a large oven-safe skillet over medium-high heat. Add the steaks without crowding; work in batches if needed. Sear for 3–4 minutes per side until a deep golden-brown crust forms.
    3️⃣ Finish cooking
Transfer the skillet to the oven for approximately 4–8 minutes, checking early with an instant-read thermometer. Timing varies with thickness and starting temperature. For food-safe doneness, reach 145°F (63°C), then rest for at least 3 minutes. Transfer the steaks to a warm platter while you make the sauce.
4️⃣ Make the garlic butter base
Carefully return the skillet to the stove over medium-low heat. Melt 2 tablespoons of butter. Add the garlic and cook for about 30 seconds, without browning it. Pour in the broth, scraping up the browned bits. Gently simmer for 1–2 minutes.
5️⃣ Add the lemon and herbs
Reduce the heat to low. Stir in the lemon juice, zest, and lemon slices. Turn off the heat and gradually whisk in the remaining 4 tablespoons of cold butter until glossy. Stir in the parsley and thyme. Taste and adjust the seasoning.
    6️⃣ Serve
Spoon the warm lemon herb butter sauce over the steaks and arrange the lemon slices on top. Serve immediately.
💡 TIP: Add the final butter off the heat and avoid boiling afterward for a smoother, glossy sauce. Start with 1 tablespoon of lemon juice, then add more if you prefer a brighter citrus flavor.
