Instructions
- Season both sides of the pork chops with salt, black pepper, garlic powder, onion powder, and Italian seasoning.
- Heat the olive oil in a large skillet over medium-high heat. Sear the pork chops for 2–3 minutes per side until golden brown. This step adds extra flavor but can be skipped if you’re short on time.
- Transfer the pork chops to the slow cooker.
- In the same skillet, sauté the minced garlic for about 30 seconds until fragrant. Pour in the chicken broth and scrape up any browned bits from the pan.
- Pour the broth mixture over the pork chops in the slow cooker.
- Cover and cook:
- Low: 6–7 hours
- High: 3–4 hours
- About 20–30 minutes before serving, whisk together the heavy cream, Parmesan cheese, and cream cheese until smooth. Stir the mixture into the slow cooker.
- Mix the cornstarch with the water to make a slurry, then stir it into the sauce to help thicken it.
- Cover and cook for another 20–30 minutes, or until the sauce is creamy and the pork chops are tender.
- Garnish with fresh parsley and serve hot.
