Ingredients

For the Pasta

  • 400 g short pasta (rotini, penne, or macaroni)
  • Salt for boiling the pasta

For the Creamy Pizza Sauce

  • 3 tablespoons unsalted butter
  • 1 medium onion, finely diced
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 3 cups milk (2% or whole milk works best)
  • 2 cups shredded mozzarella cheese (divided)
  • 1 cup plain tomato sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper to taste

Optional Add-Ins (Choose any)

  • Cooked chicken cubes
  • Sautéed mushrooms
  • Diced bell peppers
  • Black olives
  • Sweet corn
  • Red chili flakes
  • Fresh basil for serving

Instructions

1. Cook the Pasta

Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions. Drain well and set aside.

2. Prepare the Creamy Base

In a large saucepan, melt the butter over medium heat. Add the diced onion and cook for 4–5 minutes, stirring occasionally, until softened and lightly golden. Add the minced garlic and cook for another minute until fragrant.

Sprinkle the flour over the onion mixture and whisk continuously for 1 minute to remove the raw flour taste.

3. Create the Sauce

Slowly pour in the milk while whisking to prevent lumps. Continue whisking and allow the sauce to simmer for 4–6 minutes, or until it thickens slightly.

Add 1½ cups of the shredded mozzarella and stir until fully melted.

4. Add the “Pizza” Flavors

Stir in the tomato sauce, Italian seasoning, oregano, basil, salt, and pepper. Taste and adjust the seasoning if needed.

5. Combine Everything

Add the cooked pasta into the sauce and gently fold until all the pasta is evenly coated.

6. Bake to Perfection

Preheat the oven to 190°C (375°F). Transfer the pasta mixture to a lightly greased baking dish. Sprinkle the remaining mozzarella evenly over the top.

Bake for 18–22 minutes, or until the cheese is melted, bubbly, and lightly golden.

7. Serve

Allow the pasta to rest for 5 minutes before serving. Top with fresh basil or your favorite pizza-style toppings.

Tips for Best Results

  • Use a flavorful mozzarella for the creamiest melt.
  • For a richer texture, substitute ½ cup of the milk with heavy cream.
  • Add vegetables like spinach, zucchini, or bell peppers directly to the sauce for a healthier version.
  • This pasta reheats beautifully; store leftovers in an airtight container in the refrigerator for up to 3 days.
