3-Ingredient Mini Churros

These mini churros are quick to make, require only a few basic ingredients, and deliver the perfect combination of a crisp exterior and a soft, tender center. They are best served hot and coated in cinnamon sugar, with optional chocolate sauce for dipping. This recipe comes together in just a few minutes, making it ideal for snacks, entertaining, or satisfying a sudden craving.

Ingredients

  • 250 ml milk
  • 125 g all-purpose flour
  • 2 large eggs, at room temperature
  • 1⁄2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Place the milk in a saucepan and warm it over medium to low heat until it comes to a gentle boil. Milk is recommended for a soft, tender interior. Using water will result in a firmer, denser churro.
  2. Once the milk reaches a boil, remove the pan from the heat. Add the flour all at once and immediately mix with a sturdy spatula or wooden spoon. The dough will form quickly.
  3. Continue stirring until the dough pulls away from the sides of the pan and no dry flour remains.
  4. Transfer the dough to a mixing bowl or stand mixer. Allow it to cool slightly before adding the eggs.
  5. Add the first egg and mix until fully incorporated. The dough may appear split at first, but it will smooth out as you continue mixing. Add the second egg and repeat the process. Scrape down the bowl as needed to ensure an even mixture.
  6. Once the dough is smooth, place it into a piping bag fitted with a small star tip. This creates the classic churro ridges. If you do not have a star tip, you can use any piping bag or even shape the dough with a spoon.
  7. Heat oil to approximately 160°C (320°F). You do not need a thermometer; the correct temperature is indicated when the oil bubbles gently around the dough as it fries. Ensure that any tools you use, such as scissors or piping bags, are completely dry. Water causes oil to splatter.
  8. Pipe small portions of dough into the hot oil and fry until golden brown. Remove the churros and place them on paper towels to drain excess oil.
  9. While still hot, roll the churros in cinnamon sugar. A simple mixture of granulated sugar and ground cinnamon works well.
  10. Serve immediately. Churros are best enjoyed fresh and warm. Add chocolate sauce if desired.
