- 1 yellow onion, chopped

- 1 pound lean ground beef (about 98% lean)

- ½ teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) red kidney beans, rinsed and drained
- ½ cup water
- 4 whole wheat flour tortillas (6-inch), cut into 6 triangle wedges each
- 1 cup shredded taco blend cheese
Optional Garnishes:
- Plain yogurt or sour cream
- Sliced or diced avocado

Instructions
- Sauté the Onions
Heat olive oil in a large skillet over medium heat. Add the chopped onion, sprinkle with salt, and cook for 2–3 minutes, until softened and translucent. - Brown the Beef
Add the ground beef to the skillet. Cook, stirring occasionally, until browned and no longer pink. Drain excess fat if needed. - Add the Spices
Return the skillet to heat. Stir in cumin, paprika, chili powder, garlic powder, salt, and pepper. Cook for 1–2 minutes until fragrant. - Add the Tomatoes and Beans
Pour in the diced tomatoes (with their juice) and kidney beans. Stir well to combine. - Simmer the Mixture
