Ingredients

Serves 4

  • 1 tablespoon olive oil
  • 1 yellow onion, chopped
  • ¼ teaspoon salt
  • 1 pound lean ground beef (about 98% lean)
  • ¼ teaspoon ground cumin, or to taste
  • ¼ teaspoon paprika
  • ½ teaspoon chili powder, or to taste
  • ½ teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) red kidney beans, rinsed and drained
  • ½ cup water
  • 4 whole wheat flour tortillas (6-inch), cut into 6 triangle wedges each
  • 1 cup shredded taco blend cheese

Optional Garnishes:

  • Plain yogurt or sour cream
  • Sliced or diced avocado
  • Chopped green onions

Instructions

  1. Sauté the Onions
Heat olive oil in a large skillet over medium heat. Add the chopped onion, sprinkle with salt, and cook for 2–3 minutes, until softened and translucent.
  2. Brown the Beef
Add the ground beef to the skillet. Cook, stirring occasionally, until browned and no longer pink. Drain excess fat if needed.
  3. Add the Spices
Return the skillet to heat. Stir in cumin, paprika, chili powder, garlic powder, salt, and pepper. Cook for 1–2 minutes until fragrant.
  4. Add the Tomatoes and Beans
Pour in the diced tomatoes (with their juice) and kidney beans. Stir well to combine.
  5. Simmer the Mixture
Add ½ cup water, bring the mixture to a gentle boil, then reduce heat to medium-low. Simmer uncovered for about 7 minutes to allow flavors to meld.
  6. Add the Tortillas
Stir in the tortilla wedges, mixing gently to coat them with the sauce.
  7. Top with Cheese
Sprinkle the shredded taco cheese evenly over the top. Remove from heat, cover, and let the skillet sit for about 5 minutes, or until the cheese is melted and bubbly.
  8. Garnish and Serve
Top with yogurt or sour cream, avocado slices, and green onions before serving. Enjoy warm!

Tips & Variations

  • Make it spicy: Add a pinch of cayenne pepper or diced jalapeños.
  • Use chicken or turkey: Swap the beef for ground chicken or turkey for a lighter version.
  • Add veggies: Bell peppers, corn, or zucchini make great additions.
  • Make it cheesy: Mix a little extra cheese into the skillet before topping for a gooey texture.

Storage & Reheating

  • Refrigerate: Store leftovers in an airtight container for up to 3 days.
  • Reheat: Warm in a skillet over medium heat or in the microwave until heated through.
  • Freeze: Cool completely, then freeze portions for up to 2 months. Reheat directly from frozen or thaw overnight in the fridge.
