If you’ve never tried freshly baked madeleines before, you’re in for a treat. Ingredients

  • 100 g (7 tbsp) unsalted butter, plus extra for greasing the pan
  • 2 large eggs, at room temperature
  • 100 g (½ cup) granulated sugar
  • 1 teaspoon finely grated lemon zest
  • 1 teaspoon pure vanilla extract
  • 100 g (¾ cup plus 1 tbsp) all-purpose flour, sifted
  • ¼ teaspoon baking powder
  • Pinch of salt
  • Powdered sugar, for dusting (optional)

Instructions

1. Prepare the Butter

Melt the butter in a small saucepan over low heat until fully liquid. Set aside to cool slightly while you prepare the batter.

2. Mix the Batter

In a large mixing bowl, whisk together the eggs and granulated sugar until pale, thick, and slightly frothy — this should take about 3–4 minutes by hand or 2 minutes with an electric mixer.
Add the lemon zest and vanilla extract, and whisk briefly to combine.

3. Add Dry Ingredients

In a separate bowl, whisk together the flour, baking powder, and salt. Gradually fold the dry mixture into the egg mixture using a spatula, being careful not to overmix — the batter should remain airy and light.

4. Incorporate the Butter

Gently fold in the melted butter until fully incorporated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour (or up to overnight). This step helps create that classic madeleine hump and keeps the texture light.

5. Prepare the Pan

Preheat your oven to 375°F (190°C). Grease your madeleine pan lightly with melted butter and dust it with flour, shaking out the excess.

6. Bake

Spoon about one tablespoon of batter into each shell-shaped mold, filling it about three-quarters full. Bake for 10–12 minutes, or until the edges are golden brown and the centers spring back when lightly pressed.

7. Cool and Serve

Remove the madeleines from the pan immediately and let them cool on a wire rack. Dust with powdered sugar before serving, if desired.
