- 1 cup (130 g) all-purpose flour

- 2 large eggs, room temperature
- 1 1/4 cups (300 ml) milk, room temperature
- 2 tablespoons (28 g) melted butter, cooled

Instructions
1. Prepare the Batter
You can make the batter in a blender or by hand.
Blender Method:
Add all ingredients to the blender and blend for 15–30 seconds until smooth.
By Hand:
- In a large bowl, whisk together flour, sugar, and salt.
- In another bowl, whisk the eggs. Stir in milk, melted butter, and vanilla extract (if using).
- Make a well in the center of the dry ingredients, then gradually pour in the wet mixture, whisking until smooth.
- Strain the batter if necessary to remove lumps. The consistency should be like light cream.
2. Rest the Batter
Let the batter sit for 15–30 minutes at room temperature, or refrigerate for at least 1 hour and up to 2 days. If the batter thickens too much, thin it with a splash of milk or water.
3. Cook the Crepes
- Heat a 9-inch (23 cm) non-stick skillet or crepe pan over medium heat. It’s ready when a drop of water sizzles lightly.
- Lightly brush the pan with melted butter.
- Lift the pan off the heat. Pour 3–4 tablespoons of batter into the center and swirl to spread evenly.
