Grilled Chicken Wraps with Chipotle Mayo

Ingredients
Chipotle Mayonnaise
- 1 cup mayonnaise
- 2 tablespoons chipotle peppers in adobo sauce, finely chopped
- 1 tablespoon fresh lime juice

Grilled Chicken
- 1 pound boneless, skinless chicken breasts or tenders
- 2 teaspoons olive oil
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 2 teaspoons smoked paprika
- 1 teaspoon dried oregano
- 2 tablespoons fresh lime juice
- 3 garlic cloves, minced
Wrap Assembly
- 4 large (10-inch) flour tortillas
- 2 cups shredded lettuce
- 1 cup diced tomatoes
- ½ cup finely diced red onion
- 2 cups shredded cheddar and pepper jack cheese blend
Instructions
Step 1: Make the Chipotle Mayo
In a small bowl, whisk together the mayonnaise, finely chopped chipotle peppers, lime juice, salt, and pepper. Taste and adjust seasoning if needed. Cover and refrigerate until ready to use.
Step 2: Prepare the Chicken
If using thick chicken breasts, slice them horizontally into thinner cutlets about ½ inch thick. Place the chicken in a mixing bowl and add olive oil, garlic powder, onion powder, smoked paprika, oregano, lime juice, and minced garlic. Toss until well coated.
For best flavor, marinate the chicken for at least 1 hour, or overnight in the refrigerator if time allows.
Step 3: Grill the Chicken
