Melt-in-Your-Mouth Crock Pot Roast (Mississippi Style)
This crock pot roast is fall-apart tender, full of rich, savory flavor, and incredibly easy to make. With just a handful of pantry staples, you’ll have a hearty, comforting meal the whole family will love—perfect for Sunday dinner or any night you crave something warm and satisfying.
Ingredients
- 2 tablespoons olive oil (for searing, optional)
- 3–4 lb chuck roast
- 1 ounce dry Ranch dressing mix
- 1 ounce Au Jus gravy mix
- ½ cup salted butter (1 stick)
- 6 whole pepperoncini peppers
- Optional: ¼ cup pepperoncini juice (for extra flavor and a touch of heat)
- Optional: ½ cup water (for more gravy)
Instructions
1. Sear the Roast (Optional but Recommended)
Heat 2 tablespoons of olive oil in a large, heavy-bottomed skillet over medium-high heat. Sear the chuck roast for about 2 minutes per side, or until a deep golden-brown crust forms.
Tip: Searing locks in flavor and adds richness, but if you’re in a hurry, you can skip this step.
2. Assemble in the Crock Pot
Place the seared (or raw) roast into the bottom of your crock pot.
3. Add Seasonings and Flavor
Sprinkle the Ranch dressing mix and Au Jus gravy mix evenly over the roast.
4. Add Butter and Peppers
Place the butter on top of the roast, then scatter the pepperoncini peppers around and over it. If you like a bit more tang and heat, pour in the pepperoncini juice as well.
5. Add Optional Liquid
For a juicier roast and more gravy, pour ½ cup of water around the roast (avoid pouring directly on top so seasonings stay in place).
6. Slow Cook to Perfection
Cover and cook on LOW for 8 hours (recommended) or HIGH for 4–5 hours.
The meat is done when it shreds easily with a fork and is melt-in-your-mouth tender.
7. Shred and Serve
Transfer the cooked roast to a cutting board and shred using two forks or slice against the grain. Then return the meat to the crock pot to soak in the flavorful juices for 5–10 minutes before serving.
