Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1/2 cup taco sauce
  • 12 (6-inch) flour tortillas
  • 1/2 cup oil (vegetable, olive, or avocado oil – for frying)
  • 1 (16 oz) can refried beans
  • 1 1/2 cups enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 large tomato, diced
  • 1 (6 oz) can black olives, sliced
  • 3–4 green onions, sliced
  • Sour cream (optional), for serving

Instructions

1. Cook the Beef

In a large skillet over medium-high heat, cook the ground beef until browned and fully cooked. Drain excess grease. Stir in the taco seasoning, water, and taco sauce. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes until thickened and flavorful. Remove from heat.

2. Crisp the Tortillas

In a clean skillet, heat the oil over medium heat. Fry each tortilla for about 30–60 seconds on each side, or until golden and crispy. If bubbles form, gently press them down with a fork. Transfer tortillas to a paper towel-lined plate to drain excess oil.

3. Warm the Refried Beans

In a small saucepan, warm the refried beans over low heat, stirring occasionally until soft and spreadable.

4. Assemble the Pizzas

  • Place 6 tortillas on a baking sheet.
  • Spread a layer of warm refried beans over each tortilla, followed by a scoop of taco meat.
  • Top each with another tortilla to create a sandwich-like base.
  • Spread 3–4 tablespoons of enchilada sauce on top.
  • Sprinkle evenly with cheddar and pepper jack cheese.
  • Add diced tomatoes and sliced olives.

5. Bake

Preheat your oven to 400°F (200°C). Bake the assembled pizzas for 10–12 minutes, or until the cheese is melted and bubbly.

6. Garnish and Serve

Remove from the oven, top with sliced green onions, and cut into wedges. Serve hot with a dollop of sour cream if desired.
