Ingredients

For the Casserole Base:

  • 4 tablespoons melted butter (plus 2 tablespoons for topping)
  • 3 cups cooked, diced chicken breast (rotisserie chicken works great)
  • 2 cups frozen mixed vegetables (peas, carrots, corn, or a blend of your choice)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken stock (or broth)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

For the Biscuit Topping:

  • 1 package Cheddar Bay biscuit mix (reserve seasoning packet)
  • 1 cup milk
  • 1 cup shredded sharp cheddar cheese

For the Finishing Butter:

  • 2 tablespoons melted butter
  • Reserved Cheddar Bay biscuit seasoning packet
  • 1 tablespoon fresh parsley, chopped

Optional:

  • Salt, to taste
  • Additional vegetables (e.g. corn, green beans)

Instructions

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C).
  2. Prepare the Baking Dish:
    Pour 4 tablespoons of melted butter into a 9×13-inch baking dish or a 12-inch oven-safe skillet. Spread evenly to coat the bottom.
  3. Layer the Chicken and Vegetables:
    Spread the cooked, diced chicken evenly over the butter. Do not stir.
    Sprinkle the frozen vegetables evenly on top of the chicken. Again, do not stir.
  4. Mix the Sauce:
    In a medium bowl, whisk together the cream of chicken soup, chicken stock, garlic powder, and onion powder until smooth.
    Gently pour this mixture over the vegetables. Do not mix.
  5. Prepare the Biscuit Topping:
    In the same bowl, combine the biscuit mix (reserve the seasoning packet), milk, and shredded cheddar cheese. Stir until just combined.
    Carefully pour the batter over the casserole. Do not stir.
  6. Bake:
    Place the casserole in the preheated oven and bake uncovered for 50-55 minutes, or until the top is golden brown and bubbly.
    Tip: If the top is browning too quickly, tent loosely with aluminum foil during the last 15-20 minutes of baking.
  7. Prepare the Finishing Butter:
    While the casserole bakes, mix the remaining 2 tablespoons of melted butter with the reserved seasoning packet and chopped parsley.
