Ingredients

  • 1 cup old-fashioned rolled oats
  • ¾ cup whole wheat flour (or oat flour for gluten-free option)
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup coconut oil, melted (or unsalted butter)
  • ⅓ cup pure maple syrup (or honey)
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ½ cup dark chocolate chips (optional)
  • ¼ cup chopped nuts (optional)

Instructions

1. Prepare the Dough

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together oats, flour, cocoa powder, baking soda, and salt.
  • In a separate bowl, combine melted coconut oil, maple syrup, egg, and vanilla extract. Whisk until smooth.
  • Pour the wet ingredients into the dry ingredients and stir gently until fully combined.
  • Fold in chocolate chips and nuts if using.

2. Shape and Bake

  • Using a tablespoon or small cookie scoop, drop rounded dough onto the prepared baking sheet, spacing about 2 inches apart.
  • Lightly flatten each cookie with the back of a spoon.
  • Bake for 8–10 minutes, or until the edges are set but the centers are still soft.
  • Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Tips for Success

  • For extra chewiness: Chill the dough for 30 minutes before baking.
  • Sweetener swap: You can replace maple syrup with honey or agave.
  • Add-ins: Try adding shredded coconut, dried cranberries, or sunflower seeds for variety.
  • Storage: Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
