 Ingredients

  • 115g (1/2 cup) unsalted butter
  • 100g (3.5 oz) dark chocolate, chopped
  • 2 large eggs
  • 200g (1 cup) granulated sugar
  • 1 tsp pure vanilla extract
  • 100g all-purpose flour
  • 30g unsweetened cocoa powder
  • 1/4 tsp salt
  • Non-stick spray or mini paper liners

 Instructions

  1. Preheat Oven:
    Preheat your oven to 175°C (350°F). Lightly grease a mini muffin pan with non-stick spray or line it with mini paper liners.
  2. Melt Butter & Chocolate:
    In a microwave-safe bowl or a heatproof bowl set over simmering water, melt the butter and dark chocolate together. Stir until smooth and glossy. Let cool for 5–10 minutes to avoid scrambling the eggs later.
  3. Mix Dry Ingredients:
    In a separate bowl, sift together:

    • Flour
    • Cocoa powder
    • Salt
      Sifting removes lumps and ensures a smooth, even batter.
  4. Whisk Eggs & Sugar:
    In a large mixing bowl, whisk the eggs and sugar for 2–3 minutes until the mixture becomes pale and slightly thickened. This step incorporates air for a crackly top and soft texture.
  5. Combine Wet Ingredients:
    Slowly stir the cooled chocolate mixture into the egg and sugar mixture until well combined. Add the vanilla extract and stir to incorporate.
  6. Add Dry Ingredients:
    Gradually fold in the dry mixture using a spatula. Mix just until no streaks remain—do not overmix, or the bites may turn out tough.
  7. Fill the Pan:
    Spoon the batter into the prepared mini muffin pan, filling each cup about 3/4 full.
  8. Bake:
    Bake for 12–15 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Do not overbake—these are meant to be fudgy!
  9. Cool & Enjoy:
    Let brownie bites cool in the pan for about 10 minutes before transferring to a wire rack. Enjoy warm or store in an airtight container for up to 4 days.
