Ingredients

For the Beef Marinade:

  • 500g (1.1 lbs) beef sirloin or flank steak, sliced thinly against the grain
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil (optional)
  • 1 clove garlic, minced
  • ½ teaspoon black pepper

For the Stir-Fry:

  • 2 tablespoons vegetable oil, divided
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow or orange bell pepper, sliced
  • 1 large onion, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 2 tablespoons water or beef broth

For Garnish:

  • Fresh parsley or chopped green onions

Instructions

1. Marinate the Beef

In a bowl, combine beef strips with soy sauce, oyster sauce, cornstarch, garlic, sesame oil, and black pepper. Mix well to coat. Let marinate for at least 20–30 minutes (or refrigerate for up to 2 hours for deeper flavor).

2. Prepare the Vegetables

Slice all bell peppers and the onion into thin strips. Set aside.

3. Sear the Beef

Heat 1 tablespoon oil in a large skillet or wok over high heat. Add the beef in a single layer (cook in batches if needed) and sear for 1–2 minutes per side until browned but tender. Remove and set aside.

4. Stir-Fry the Vegetables

In the same pan, add remaining oil. Toss in onions and bell peppers. Stir-fry over high heat for 3–4 minutes until slightly softened but still crisp.

5. Combine and Finish

Return beef to the pan. Add soy sauce, oyster sauce, sugar, and water or broth. Stir-fry everything together for another 2 minutes until well coated and heated through.

6. Garnish and Serve

Turn off heat and garnish with fresh parsley or chopped green onions. Serve immediately with rice or noodles.

Tips for Perfect Stir-Fry

  • Slice against the grain for the most tender beef.
  • Don’t overcrowd the pan when searing—cook in batches for better browning.
  • Use high heat and keep ingredients moving for the best stir-fry texture.
  • Customize with your favorite vegetables like broccoli, snap peas, or mushrooms.
