Honey Glazed Chicken Bowl with Brown Rice, Crisp Lettuce & Cucumber
This nourishing and flavorful dish combines tender honey-glazed chicken with hearty brown rice and fresh vegetables for a balanced, satisfying meal. It’s easy to make, customizable, and perfect for lunch or dinner!
Ingredients (Serves 2)
For the Chicken:
- 2 boneless, skinless chicken breasts
- 2 tbsp honey
- 1 tbsp soy sauce
- 1 tsp minced garlic
- 1 tsp olive oil (or any preferred cooking oil)
- Salt and black pepper, to taste
For the Rice:
- 1 bowl cooked brown rice (or white rice if preferred)
- Chopped green onions or parsley, for garnish
For the Vegetables:
- 1/2 cucumber, thinly sliced
- A handful of fresh lettuce leaves (romaine, iceberg, or any variety you like)
Instructions
1. Marinate the Chicken
In a medium bowl, whisk together honey, soy sauce, minced garlic, olive oil, salt, and pepper.
Add the chicken breasts, turning to coat evenly.
Cover and let marinate for at least 20 minutes at room temperature (or refrigerate for 1–2 hours for deeper flavor).
2. Cook the Chicken
Heat a non-stick skillet or grill pan over medium heat.
Add the marinated chicken and cook for 5–7 minutes per side, or until golden brown and fully cooked (internal temperature should reach 165°F / 74°C).
Let rest for 5 minutes before slicing into bite-sized strips.
3. Prepare Rice and Veggies
While the chicken is cooking, warm your pre-cooked rice or prepare a fresh batch.
Wash and slice the cucumber and rinse the lettuce thoroughly.
4. Assemble the Bowls
Divide the rice into two bowls or plates.
Top with sliced chicken, cucumber slices, and lettuce leaves.
Sprinkle with chopped green onions or parsley for a fresh, vibrant finish.
