A bright, tropical twist on a creamy Italian classic! This Coconut Lemon Herb Chicken Alfredo is rich and satisfying yet refreshingly light thanks to a zesty coconut-lemon sauce. Serve it over pasta or garlic-roasted potatoes for a versatile meal packed with flavor.


Ingredients

For the Chicken:

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • Zest and juice of 1 lime
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • Salt & pepper, to taste

For the Coconut Lemon Alfredo Sauce:

  • 2 tbsp butter
  • 1 clove garlic, minced
  • ½ cup full-fat coconut milk
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • Zest of ½ lime
  • 1 tsp fresh chopped cilantro (optional)
  • Salt & pepper, to taste

For Garlic-Roasted Potatoes (or Pasta Option):

  • 2 medium Yukon Gold potatoes, diced (or 8 oz pasta, cooked al dente)
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • 2 tbsp grated Parmesan cheese
  • Salt & pepper, to taste

Garnish:

  • 1 tbsp fresh cilantro, chopped
  • Additional lime zest
  • Lime wedges, for serving

Instructions

1. Marinate & Cook the Chicken

  • In a bowl, combine olive oil, lime zest and juice, garlic, oregano, salt, and pepper.
  • Toss in the chicken pieces and let marinate for at least 15 minutes.
  • Heat a skillet over medium heat. Add chicken and cook 3–4 minutes per side, or until golden and fully cooked. Remove from skillet and keep warm.

2. Prepare the Coconut Lemon Alfredo Sauce

  • In the same skillet or a clean saucepan, melt butter over medium heat.
  • Add garlic and sauté for 30 seconds until fragrant.
  • Pour in coconut milk and heavy cream. Stir in Parmesan and lime zest.
  • Simmer 5–7 minutes, stirring frequently, until sauce thickens slightly.
  • Season with salt and pepper. Stir in fresh cilantro if using. Keep warm.

3. Make the Potatoes (or Cook Pasta)

  • For Potatoes:
    • Preheat oven to 400°F (200°C).
    • Toss diced potatoes with olive oil, garlic, oregano, Parmesan, salt, and pepper.
    • Spread on a baking sheet and roast 20–25 minutes, flipping halfway through, until golden and crispy.
  • For Pasta:
    • Cook pasta al dente according to package instructions. Drain and toss with the prepared Alfredo sauce.

4. Assemble & Serve

  • Spoon Alfredo sauce over the roasted potatoes or pasta.
  • Top with cooked chicken pieces.
  • Garnish with chopped cilantro, extra lime zest, and lime wedges.
  • Serve immediately and enjoy the fresh, creamy fusion of flavors.
