Seared Cod & Scallops with Garlic Butter Veggies

Bring the elegance of a restaurant-quality seafood dish to your dinner table in just 35 minutes. This meal features a golden-seared cod fillet, buttery scallops, and a colorful medley of baby potatoes and carrots sautéed in garlic butter. A touch of mashed potatoes adds that extra creamy comfort.
Ingredients
Seafood:
- 1 cod fillet
- 4 large sea scallops
- 1 tbsp olive oil
- Salt & black pepper to taste
Veggies & Sides:
- ½ lb baby potatoes
- 1 cup baby carrots
- ¼ cup mashed potatoes (for serving or reheated leftovers)
For Garlic Butter:
- 2 tbsp unsalted butter
- 2 garlic cloves, minced
- 1 tsp fresh thyme or parsley, chopped
Instructions
1. Boil & Sauté the Vegetables
Boil baby potatoes and carrots in salted water until fork-tender (about 10–12 minutes). Drain well. In a large skillet, melt 1 tbsp of butter, add garlic, herbs, and sauté the veggies for 2–3 minutes until lightly golden and fragrant. Set aside.
2. Sear the Cod
Pat the cod fillet dry and season both sides with salt and pepper. Heat olive oil in a pan over medium-high heat. Sear the cod for 3–4 minutes per side until golden-brown and cooked through. Remove and let rest.
3. Sear the Scallops
Make sure scallops are completely dry for a good sear. In the same pan, add remaining butter. Sear scallops for 1–2 minutes per side until a golden crust forms. Avoid overcrowding the pan.
4. Warm the Mashed Potatoes
If using prepared mashed potatoes, reheat with a touch of butter and season to taste.
5. Plate & Serve
Spread mashed potatoes on each plate. Top with the seared cod and scallops. Arrange the garlic butter-coated baby potatoes and carrots alongside. Garnish with fresh herbs and serve immediately.
