Healthy Chicken & Veggie Bowl
A colorful, nutrient-packed bowl full of lean protein, vibrant veggies, and creamy avocado—perfect for a quick lunch or light dinner. This recipe is simple, satisfying, and naturally gluten-free.
Ingredients:
- 1 cup roasted chicken, shredded or chopped
- ½ avocado, sliced
- 1 cup broccoli florets, steamed
- 1 medium carrot, sliced or shredded
- ½ cup peas (fresh or frozen)
- ½ cup green beans, trimmed and steamed
- ½ cup corn kernels
- 1–2 tbsp fresh lemon juice
- Salt, to taste
- (Optional: freshly ground black pepper, olive oil, or a light vinaigrette)
Instructions:
- Steam the vegetables
Steam or lightly boil the broccoli, peas, green beans, and carrots until tender but still crisp, about 3–5 minutes. Drain and allow to cool slightly. - Assemble the bowl
In a large serving bowl or plate, arrange the roasted chicken, cooked vegetables, corn, and avocado slices neatly. - Season and dress
