Grilled Chicken Rice Bowl – Fresh, Flavorful & Satisfying!
This Grilled Chicken Rice Bowl is the perfect combination of healthy, hearty, and easy to make. Juicy marinated chicken pairs beautifully with crisp vegetables and fluffy rice for a wholesome meal that’s great for lunch or dinner.
Ingredients:
- Lettuce leaves (romaine, green leaf, or iceberg work well)
- 1 cup cooked brown or white rice
- 1/2 cucumber, thinly sliced
- 1 grilled chicken breast
- Optional: chopped fresh parsley for garnish
For the chicken marinade:
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 clove garlic, minced
- 1/4 teaspoon black pepper
Instructions:
1. Marinate and Cook the Chicken
- In a bowl, mix soy sauce, honey, minced garlic, and black pepper.
- Add the chicken breast and let it marinate for at least 30 minutes.
- Grill or pan-fry the chicken over medium heat until golden brown and fully cooked (internal temperature should reach 165°F / 74°C).
- Let the chicken rest for a few minutes, then slice into strips.
2. Assemble the Rice Bowl
- Add a generous layer of lettuce to one side of your serving bowl.
- Spoon the warm cooked rice next to the lettuce.
- Arrange cucumber slices on the opposite side of the rice.
3. Top and Serve
- Place the sliced chicken on top of the rice.
- Garnish with chopped parsley if desired.
