Crispy Chicken Glazed with Hot Honey Sauce
Ingredients (Serves 2–3)
Chicken:
2 boneless, skinless chicken breasts, cut into bite-sized pieces
1 egg, beaten
½ cup panko breadcrumbs
1 tbsp olive oil
1 tsp dried oregano
Salt & freshly cracked black pepper to taste
2 tbsp hot honey (or regular honey with a pinch of red pepper flakes)
Instructions:
Preheat your oven to 400°F (200°C).
In one bowl, whisk the beaten egg. In another bowl, combine panko breadcrumbs, oregano, salt, and pepper.
Dip each chicken piece into the egg, then coat with the breadcrumb mixture.
In a skillet, heat olive oil over medium heat. Add the chicken pieces and cook until golden brown on all sides.
Once crispy, remove from heat and drizzle with hot honey.
Creamy Garlic Alfredo Sauce
Ingredients:
8 oz fettuccine pasta
1 tbsp butter
3 cloves garlic, minced
1 ½ cups heavy cream
½ cup grated Parmesan cheese
Salt & freshly cracked black pepper to taste
Instructions:
Cook fettuccine according to package instructions.
In a saucepan, melt butter over medium heat and sauté minced garlic until fragrant.
Add heavy cream and bring to a simmer. Stir in Parmesan cheese until melted.
Season with salt and pepper. Toss with cooked fettuccine.
Roasted Garlic Potatoes
Ingredients:
2 medium Yukon Gold potatoes, cut into ½-inch cubes
1 tbsp olive oil
1 head of garlic, cloves separated and smashed
½ tsp dried rosemary
Salt & freshly cracked black pepper to taste
Instructions:
Toss potatoes with olive oil, garlic, rosemary, salt, and pepper.
Spread on a baking sheet and roast in the oven for 25-30 minutes at 400°F until golden and tender.
Creamy Fig-Balsamic Pesto Drizzle
Ingredients:
¼ cup fresh basil leaves
¼ cup dried figs, roughly chopped
2 tbsp grated Parmesan cheese
1 tbsp olive oil
1 tbsp balsamic vinegar
2 tbsp heavy cream
Salt & freshly cracked black pepper to taste
Instructions:
Blend basil, figs, Parmesan, olive oil, balsamic vinegar, and heavy cream in a food processor until smooth.
Season with salt and pepper.
Assembly
Plate the crispy chicken alongside the creamy fettuccine and roasted potatoes. Drizzle the fig-balsamic pesto over the top for an extra flavor boost.
