Total Time: 40 minutes

Servings: 4–6

Ingredients

For the Enchiladas:

  • 2 cups cooked chicken breast, shredded
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 small onion, chopped
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and black pepper, to taste

For the Creamy Sauce:

  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tbsp all-purpose flour
  • 1 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp ground cumin
  • Salt and black pepper, to taste

Instructions

Step 1: Prepare the Chicken Filling

Heat the olive oil in a skillet over medium heat. Add the chopped onion and sauté for 3–4 minutes, until softened. Stir in the shredded chicken, cumin, chili powder, salt, and pepper. Cook until the chicken is heated through and well coated with the seasonings. Remove from heat and set aside.

Step 2: Make the Creamy Sauce

In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute to form a roux. Gradually pour in the chicken broth, whisking continuously to avoid lumps. Add the heavy cream, sour cream, garlic powder, onion powder, cumin, salt, and pepper. Continue stirring and cook for 3–4 minutes, until the sauce thickens and becomes smooth and creamy.

Step 3: Assemble the Enchiladas

Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish. Lay the tortillas flat and spoon a portion of the chicken mixture into the center of each. Sprinkle a generous amount of cheddar and Monterey Jack cheese over the chicken. Roll up each tortilla and place them seam-side down in the baking dish.

Step 4: Add Sauce and Cheese

Pour the creamy sauce evenly over the enchiladas. Sprinkle the remaining shredded cheese on top, covering the sauce generously.

Step 5: Bake

Bake in the preheated oven for 20–25 minutes, or until the cheese is melted, bubbly, and lightly golden brown.

Step 6: Serve

Remove from the oven and let the enchiladas sit for a few minutes before serving. Garnish with chopped cilantro, additional sour cream, or sliced jalapeños if desired. Serve hot with Mexican rice, refried beans, or a fresh green salad.
