Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, thinly sliced
  • 2–3 garlic cloves, minced
  • 400 g (14 oz) smoked sausage or your favorite cooked sausage, sliced
  • 3 tablespoons soy sauce
  • 2 tablespoons tomato paste
  • 3 tablespoons honey
  • 1 tablespoon brown sugar (optional, for extra caramelization)
  • ½ teaspoon chili flakes (adjust to taste)
  • 1 cup water or low-sodium chicken broth
  • 250 g (9 oz) penne or any short pasta, cooked and drained
  • Salt and black pepper, to taste
  • Fresh parsley or green onions, chopped (for garnish)
  • Grated Parmesan (optional)

Instructions

  1. Sauté the aromatics:
    In a large non-stick skillet, heat olive oil over medium heat. Add the sliced onion and sauté for 4–5 minutes until soft and lightly golden. Add the minced garlic and cook for another 30 seconds until fragrant.
  2. Brown the sausage:
    Add the sliced sausage to the skillet and cook until browned and heated through—about 5 minutes.
  3. Make it sticky:
    Stir in the soy sauce, tomato paste, honey, brown sugar (if using), and chili flakes. Pour in the water or broth and bring to a simmer. Let the sauce cook down and thicken for 4–6 minutes, stirring occasionally.
  4. Add the pasta:
    Toss in the cooked pasta and mix until everything is well coated in the sticky glaze. Season with salt and pepper to taste.
  5. Serve and garnish:
    Remove from heat, sprinkle with fresh herbs and Parmesan if desired, and serve hot right from the skillet.

Tips and Variations
