Ingredients:
- 2 lbs beef chuck, cut into 1-inch cubes
- Salt and pepper, to taste
- 3 tablespoons olive oil
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth

- 2 cups potatoes, diced
- 2 cups celery, sliced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme

Instructions:
1. Prepare the Beef
- Season beef cubes with salt and pepper.
- Heat 2 tablespoons olive oil in a large pot or Dutch oven over medium-high heat.
- Brown beef in batches without overcrowding. Cook for about 5–7 minutes per batch. Remove beef and set aside.
2. Sauté the Vegetables
- In the same pot, add the remaining tablespoon of olive oil.

4. Add the Vegetables
- Add carrots, potatoes, and celery.

5. Optional Thickening
- To thicken, mix 1/4 cup flour with a small amount of cold water until smooth. Gradually stir into the stew and simmer an additional 10 minutes.
6. Final Seasoning
- Remove the bay leaf.
- Taste and adjust seasoning with additional salt and pepper as needed.
- Garnish with fresh parsley before serving.
