Healthy Mushroom Stuffed Chicken Breast

This Healthy Mushroom Stuffed Chicken Breast recipe is juicy, flavorful, and packed with melty cheese and savory mushrooms — a wholesome dish that feels indulgent yet fits a balanced lifestyle. Perfect for a family dinner or meal prep!

Ingredients:

  • 2 large chicken breasts
  • 1 cup mushrooms, finely chopped
  • ½ cup shredded part-skim mozzarella cheese
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • ½ teaspoon onion powder
  • ¼ teaspoon dried thyme or Italian seasoning
  • Salt and pepper, to taste
  • ¼ cup low-sodium chicken broth
  • Fresh parsley, for garnish

Instructions:

  1. Prepare the Filling:
    In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the chopped mushrooms and cook for 4–5 minutes until tender and most of the moisture evaporates. Season with salt, pepper, onion powder, and thyme. Remove from heat and let cool slightly, then stir in the shredded mozzarella.
  2. Prepare the Chicken:
    Carefully slice a pocket into each chicken breast without cutting all the way through. Season the outside and inside of each breast with salt and pepper.
  3. Stuff the Chicken:
    Spoon the mushroom and cheese mixture into each chicken breast pocket. Secure with toothpicks if necessary to keep the filling inside.
  4. Cook:
    In the same skillet, add a little more olive oil if needed and sear the stuffed chicken breasts for 3–4 minutes per side until golden brown.
  5. Bake:
    Preheat your oven to 375°F (190°C). Transfer the seared chicken breasts to a baking dish. Pour the chicken broth into the bottom of the dish to keep the chicken moist while baking. Cover with foil and bake for 20–25 minutes, or until the internal temperature of the chicken reaches 165°F (74°C).
  6. Serve:
    Let the chicken rest for a few minutes before slicing. Garnish with freshly chopped parsley and enjoy!
