Greek Chicken Alfredo with Truffle Mushroom Sauce

🍗 Garlic-Herb Chicken
2 boneless, skinless chicken breasts, cut into bite-sized pieces

2 medium potatoes, diced into small cubes
2 tbsp olive oil
1 clove garlic, minced 🧄
½ cup grated Parmesan cheese
Salt & pepper to taste
½ tsp paprika (optional)

2 cups fresh spinach
1 clove garlic, minced 🧄
1 tbsp olive oil
Salt & pepper to taste

💡 Instructions
1. Prepare the Garlic-Herb Chicken
In a bowl, combine the chicken pieces with minced garlic, dried oregano, olive oil, salt, and pepper. Mix until well-coated.
In a skillet over medium-high heat, add the seasoned chicken and cook for about 5–7 minutes, or until cooked through and golden brown. Remove from the skillet and set aside.
2. Make the Truffle Mushroom Alfredo Sauce
In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the sliced mushrooms and sauté until tender (about 5 minutes).
Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese and truffle oil, seasoning with salt and pepper. Cook until the sauce thickens slightly, about 2–3 minutes. Return the cooked chicken to the sauce and stir to coat.
3. Prepare the Crispy Garlic-Parmesan Potatoes
Preheat your oven to 425°F (220°C).
Toss the diced potatoes with olive oil, minced garlic, Parmesan cheese, salt, pepper, and paprika, if using.
Spread the potatoes in a single layer on a baking sheet and bake for 25–30 minutes, or until golden and crispy, flipping halfway through.
4. Sauté the Spinach
In a separate skillet, heat olive oil over medium heat. Add minced garlic and sauté for 30 seconds.
Add the spinach and sauté until wilted. Season with salt, pepper, and a squeeze of lemon juice, if desired.
5. Assemble and Serve
Plate the garlic-herb chicken coated in truffle mushroom Alfredo sauce alongside crispy garlic-Parmesan potatoes and sautéed spinach. Garnish with freshly chopped parsley.
