San Sebastian Cheesecake (Basque Burnt Cheesecake)

A rustic yet indulgent cheesecake that’s intentionally “burnt” on top for a deep caramelized flavor while keeping the inside silky smooth. No crust, no water bath, no fuss!

Ingredients:

  • 2 lbs (900g) cream cheese, room temperature
  • 1 ½ cups (300g) granulated sugar
  • 6 large eggs, room temperature
  • 2 cups (480ml) heavy cream
  • ¼ cup (30g) all-purpose flour
  • ½ tsp salt
  • 1 ½ tsp pure vanilla extract
  • Optional: powdered sugar for dusting before serving

Instructions:

  1. Preheat and Prepare the Pan:
    • Preheat your oven to 410°F (210°C).
    • Line a 9-inch (23cm) springform pan with two large sheets of parchment paper, allowing the edges to hang over. This helps with easy removal and gives the cake its signature rustic look.
  2. Beat the Cream Cheese and Sugar:
    • In a large mixing bowl, beat the cream cheese and sugar together on medium speed until the mixture is smooth and creamy, about 3–4 minutes. Scrape down the sides of the bowl to ensure everything is evenly incorporated.
  3. Add the Eggs:
    • Add the eggs one at a time, beating well after each addition. The batter should be light and slightly fluffy.
  4. Incorporate the Cream and Flavoring:
    • Reduce the speed to low, then slowly pour in the heavy cream, vanilla extract, and salt. Mix until fully combined and smooth.
  5. Add the Flour:
    • Sift in the flour and mix until just incorporated. Don’t overmix at this stage.
  6. Pour and Bake:
    • Pour the batter into the prepared pan. Tap the pan gently on the counter to release any large air bubbles.
    • Bake in the center of the oven for 50–60 minutes, or until the top is deeply golden brown and the center still jiggles slightly when shaken.
  7. Cool and Chill:
    • Let the cheesecake cool in the pan at room temperature for 1 hour. Then refrigerate for at least 4 hours or overnight to set completely.
  8. Serve:
    • Gently remove the cheesecake from the pan and peel away the parchment.
    • Slice and serve chilled or at room temperature. Optionally dust with powdered sugar before serving.

Tips for Success:

  • Room temperature ingredients are key for a smooth batter.
  • For a richer flavor, use high-fat cream cheese.
  • The signature burnt top forms naturally—don’t open the oven door while baking.
