Nutella Stuffed Sweet Buns

Ingredients
For the Dough:
- 1/2 cup warm water
- 1 tsp instant yeast
- 1 1/2 cups bread flour (plus more if needed)
- 3 tsp milk powder
- 1/4 cup granulated sugar
- 2 tbsp custard powder
- 1 large egg, lightly beaten
- 2 tbsp unsalted butter, softened
For the Filling:
- 8–10 tbsp Nutella (chilled for easy scooping)
For the Egg Wash:
- 1 egg
- 1 tbsp water
For the Glaze:
- 2 tsp sugar
- 1 tsp warm water
Optional Topping:
- Chocolate sprinkles
Instructions
- Chill the Nutella
Place Nutella in the fridge for 1 hour to firm up—this makes it easier to handle when stuffing the dough. - Activate the Yeast
In a small bowl, combine warm water and yeast. Let sit for 5 minutes until foamy. - Make the Dough
In the bowl of a stand mixer fitted with a dough hook, mix together flour, milk powder, sugar, and custard powder. Add the beaten egg and mix until crumbly. - Add the Yeast Mixture
Slowly pour in the yeast water, mixing until a cohesive dough forms. If the dough is too sticky, sprinkle in a little more flour. - Incorporate the Butter
Add softened butter one tablespoon at a time, beating it into the dough. Knead for 8 minutes until smooth and tacky. - First Rise
Place dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for 1 hour, or until doubled in size. (Alternatively, refrigerate for up to 8 hours and bring to room temperature before using.) - Divide and Rest
Turn the dough out onto a lightly floured surface and divide it into 8 equal pieces. Let rest for 15 minutes. - Shape and Fill
Flatten each piece into a 4-inch circle, keeping the center slightly thicker than the edges. Place 1 tablespoon of chilled Nutella in the center, then pinch the edges together to seal. Flip the bun seam-side down and place on a parchment-lined baking sheet. - Final Rise
Cover the buns and let them rise for another 40 minutes until puffy. - Bake
Preheat oven to 350°F (175°C). Brush the buns with egg wash and bake for 15–20 minutes, or until golden brown. Cool on a wire rack. - Glaze and Garnish
Mix sugar and warm water to make a simple syrup. Brush the tops of the warm buns and sprinkle with chocolate sprinkles, if desired.
