Decadent Chicken and Mushroom Pasta with a Creamy Sauce

Ingredients
- 2 chicken breasts, cubed
- 250 ml finely chopped mushrooms
- 125 ml thick sour cream
- 1 tablespoon olive oil
- 2 garlic cloves, minced
- 125 ml grated parmesan cheese
- 225 g pasta of your choice (fettuccine, penne, or spaghetti work well)
- Salt and pepper, to taste
Instructions
- Cook the Pasta
In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside. - Sauté the Chicken
In a large skillet, heat olive oil over medium heat. Add the cubed chicken, season with salt and pepper, and sauté until golden and cooked through, about 6–8 minutes. Remove and set aside. - Cook the Mushrooms and Garlic
In the same skillet, add the minced mushrooms and cook until they release their juices and begin to brown, about 4–5 minutes. Add the minced garlic and cook for another minute until fragrant. - Make the Creamy Sauce
Lower the heat to medium-low. Stir in the sour cream and parmesan cheese. Mix until the cheese melts and the sauce becomes smooth and creamy. - Combine Everything
Return the cooked chicken to the skillet. Stir to coat in the sauce, then add the drained pasta. Toss everything together until the pasta is well coated and heated through. - Serve
Serve hot, garnished with extra parmesan or chopped parsley if desired.
