Golden, crunchy, and full of bold flavor, these Crispy Garlic Parmesan Roasted Potatoes are the ultimate side dish for any meal. Coated in a savory mix of melted butter, garlic, herbs, and a generous sprinkle of Parmesan cheese and panko, every bite is packed with crunch and cheesy goodness. Whether you’re pairing them with roasted meats, grilled vegetables, or simply enjoying them on their own, these potatoes are guaranteed to steal the show.
Ingredients:
- 2 lbs baby potatoes or Yukon Gold potatoes, halved or quartered
- 1/2 cup grated Parmesan cheese
- 1/4 cup panko breadcrumbs (for extra crunch)
- 2 tbsp olive oil
- 2 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme (or use 2 tsp fresh thyme)
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking.
2. Season the Potatoes
In a large mixing bowl, combine the halved or quartered potatoes with olive oil, melted butter, minced garlic, garlic powder, onion powder, thyme, salt, and pepper. Toss everything together until the potatoes are fully coated.
3. Add the Parmesan Coating
Sprinkle in the grated Parmesan cheese and panko breadcrumbs. Gently toss again, making sure every potato piece is evenly covered in the cheesy breadcrumb mixture.
4. Roast to Perfection
Arrange the coated potatoes cut side down on the prepared baking sheet. This ensures maximum surface contact for that crispy, golden crust.
Bake for 30–35 minutes, or until the potatoes are tender inside and crispy on the outside.
5. Garnish and Serve
Remove from the oven and sprinkle with chopped fresh parsley. Serve immediately while hot and crispy.
Helpful Tips:
- Extra Crispy Finish: For an extra-crunchy texture, switch your oven to broil for the last 2–3 minutes of baking. Watch carefully to prevent burning.
- Flavor Boost: Add a pinch of smoked paprika or cayenne pepper to the seasoning mix for a gentle kick of heat and depth.
- Make it a Meal: Top with a dollop of sour cream or serve alongside grilled chicken, steak, or even fried eggs for a hearty brunch option.
