Ingredients
- 1 lb ground beef
- 1 packet taco seasoning mix
- 1 can (10 oz) diced tomatoes with green chilies (like Rotel), undrained
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (canned or frozen)
- 3 cups corn chips (such as Fritos)
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup sliced black olives (optional)
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro (optional)
- 1 large tomato, chopped
- 1 cup shredded lettuce
Instructions
1. Cook the Ground Beef Filling
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, cook the ground beef until browned and fully cooked. Drain any excess fat.
Stir in the taco seasoning, diced tomatoes with green chilies, black beans, and corn. Simmer the mixture for about 5 minutes, allowing the flavors to meld.
2. Layer the Casserole
In a 9×13-inch baking dish, create the first layer with corn chips.
Spoon the beef mixture evenly over the chips, then top with shredded cheddar cheese.
3. Bake
Place the dish in the preheated oven and bake for 15–20 minutes, or until the cheese is melted, bubbly, and golden around the edges.
4. Top and Serve
Let the casserole cool for a few minutes.
Spread sour cream across the top, then sprinkle with black olives, green onions, chopped tomato, cilantro, and shredded lettuce.
