Crispy Parmesan Onion Fritters: A Mediterranean-Inspired Delight

Ingredients
For the Fritters:
- 3 medium onions, peeled and finely diced (450g / 1 lb)
- 1 medium carrot, shredded (100g)
- 2 garlic cloves, minced (10g)
- 1 cup grated Parmesan cheese (100g)
- 2 large eggs
- ½ cup all-purpose flour (60g)
- ⅓ cup fresh parsley, finely chopped
- ½ teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
- ¼ cup vegetable or olive oil, for frying (60ml)
Instructions
Step 1: Prepare the Vegetables
- Dice the onions into small, uniform pieces for even cooking.
- Shred the carrot using the large holes of a box grater. Pat with a paper towel to remove excess moisture if needed.
- Finely mince the garlic cloves.
Step 2: Make the Batter
- In a large mixing bowl, combine diced onions, shredded carrot, and minced garlic.
- Add the grated Parmesan and mix to distribute evenly.
- Crack in the eggs and stir to combine.
- Add flour, parsley, paprika, salt, and black pepper.
- Mix until the batter holds together but remains moist.
Step 3: Cook the Fritters
- Heat a heavy-bottomed skillet over medium heat. Add oil to coat the bottom.
- Using a spoon or scoop, portion out 2–3 tablespoons of batter per fritter.
- Flatten each into ½-inch thick patties.
- Fry for 2–3 minutes on one side, until golden and crispy.
- Flip and cook for another 1–2 minutes.
- Transfer to a paper towel-lined plate to drain excess oil.
