Golden Parmesan Potatoes with a Garlic Twist

Ingredients:

  • 4 medium potatoes
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic, finely minced
  • ½ cup bread crumbs (panko or regular)
  • 1 tsp dried oregano
  • 2 tbsp olive oil
  • 1½ tbsp corn starch or potato starch
  • ½ tsp red pepper powder (adjust to taste)
  • Salt and black pepper, to taste

Optional Cheese Sauce:

  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • ¾ cup milk (whole or 2%)
  • ⅓ cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions:

  1. Preheat the Oven:
    Set your oven to 200°C (400°F). Line a baking sheet with parchment paper for easy cleanup.
  2. Prepare the Potatoes:
    Wash, peel, and cut the potatoes into thin slices or wedges. Keep the thickness consistent for even baking.
  3. Season the Potatoes:
    In a large mixing bowl, toss the potato slices with minced garlic, grated Parmesan, oregano, red pepper powder, salt, and black pepper.
  4. Add Starch and Oil:
    Sprinkle in the corn starch (or potato starch) and drizzle with olive oil. Toss until each piece is evenly coated.
  5. Coat with Bread Crumbs:
    Spread bread crumbs onto a shallow plate. Press each potato slice into the crumbs, coating both sides.
  6. Arrange and Bake:
    Lay the coated potatoes in a single layer on the prepared baking sheet. Avoid overlapping for maximum crispiness.
    Bake for 25–30 minutes, flipping them halfway through, until golden brown and crispy.
  7. Make the Optional Cheese Sauce:
    In a small saucepan over medium heat, melt the butter. Whisk in the flour to form a roux. Gradually add the milk, whisking continuously until thickened. Stir in the Parmesan until melted and smooth. Season to taste.
  8. Serve and Enjoy:
    Serve hot with the cheese sauce on the side or drizzled over the top. Perfect as a snack, appetizer, or side dish.

Recipe Notes:

  • For extra crispiness, use panko bread crumbs.
  • You can leave the potato skins on for a more rustic texture.
  • Try adding chopped fresh parsley or chives for garnish before serving.
