Golden Parmesan Potatoes with a Garlic Twist
Ingredients:
- 4 medium potatoes
- ½ cup grated Parmesan cheese
- 3 cloves garlic, finely minced
- ½ cup bread crumbs (panko or regular)
- 1 tsp dried oregano
- 2 tbsp olive oil
- 1½ tbsp corn starch or potato starch
- ½ tsp red pepper powder (adjust to taste)
- Salt and black pepper, to taste
Optional Cheese Sauce:
- 1 tbsp butter
- 1 tbsp all-purpose flour
- ¾ cup milk (whole or 2%)
- ⅓ cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions:
- Preheat the Oven:
Set your oven to 200°C (400°F). Line a baking sheet with parchment paper for easy cleanup. - Prepare the Potatoes:
Wash, peel, and cut the potatoes into thin slices or wedges. Keep the thickness consistent for even baking. - Season the Potatoes:
In a large mixing bowl, toss the potato slices with minced garlic, grated Parmesan, oregano, red pepper powder, salt, and black pepper. - Add Starch and Oil:
Sprinkle in the corn starch (or potato starch) and drizzle with olive oil. Toss until each piece is evenly coated. - Coat with Bread Crumbs:
Spread bread crumbs onto a shallow plate. Press each potato slice into the crumbs, coating both sides. - Arrange and Bake:
Lay the coated potatoes in a single layer on the prepared baking sheet. Avoid overlapping for maximum crispiness.
Bake for 25–30 minutes, flipping them halfway through, until golden brown and crispy. - Make the Optional Cheese Sauce:
In a small saucepan over medium heat, melt the butter. Whisk in the flour to form a roux. Gradually add the milk, whisking continuously until thickened. Stir in the Parmesan until melted and smooth. Season to taste. - Serve and Enjoy:
Serve hot with the cheese sauce on the side or drizzled over the top. Perfect as a snack, appetizer, or side dish.
