1 pound of pork sausage
1 cup of shredded Monterey Jack cheese
Grated sharp cheddar cheese, 1 cup.
Chopped onion: 1/2 cup
Green bell pepper, finely chopped (if desired) 1/2 cup.
4 big eggs
Two cups of half-and-half.
1 cup of regular flour
Half a teaspoon of baking powder.
Add salt and black pepper according to your preference.
Green onions or chives can be used as a garnish, but it is optional.
Directions:
Make Sausage and Vegetables: Cook the sausage in a pan until it is brown and broken into small pieces. Cook the onions and bell pepper (if using) in the same pan until they are soft.
Make the Pie. Place the cooked sausage in a greased baking dish. Put the cooked vegetables and grated cheeses on top.
Make the egg mixture. Mix the eggs, milk, flour, baking powder, salt, and pepper together.
Add beaten eggs. Pour the beaten eggs over the sausage and cheese in the baking dish.
Cook in the oven. Cook the pie in an oven that has been heated to 350°F (175°C) for 35-40 minutes, or until it is firm.
