Smothered Chicken and Rice

Ingredients
- 4 boneless, skinless chicken breasts or thighs, cut into bite-sized chunks
- 2 tablespoons olive oil

- 1 cup chicken broth
- ½ cup heavy cream (or milk for a lighter option)
- ¼ cup all-purpose flour
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- ½ teaspoon paprika (optional, for extra flavor)
- ½ teaspoon dried thyme or oregano (optional)
- 2 cups cooked rice (white, brown, or jasmine)
Instructions
- Prepare the Chicken
- Season the chicken pieces with salt, pepper, and paprika (if using).
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken and sear for 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.
- Sauté the Aromatics
- In the same skillet, add the diced onion and cook for about 5 minutes until soft and translucent.
- Add the minced garlic and cook for another minute, stirring frequently until fragrant.

- Simmer the Chicken
- Stir in the heavy cream (or milk) and mix well.
- Return the chicken to the skillet, ensuring it is coated in the sauce.
- Reduce the heat to low and let the chicken simmer for 10-15 minutes until fully cooked and tender. The sauce should be thick and creamy.
