Cheesesteak Tortellini with Provolone Sauce made at home.

List of ingredients:

For the pasta dish called Tortellini:

1 pound of cheese-filled pasta (fresh or frozen)

1 tablespoon of olive oil

For the Cheesesteak Filling:

1 pound of thinly sliced beef steak, like ribeye or sirloin.

1 spoon of olive oil

1 big onion, cut into thin pieces.

1 green pepper, cut into slices.

Add salt and pepper according to your preference.

For the Cheese Sauce:

2 tablespoons of butter

2 tablespoons of regular flour

2 cups of milk

1 cup of grated provolone cheese

Add salt and pepper according to your preference.

Instructions:

Prepare the tortellini.

Prepare the tortellini following the instructions on the package until they are firm but tender. Drain the food and mix it with 1 tablespoon of olive oil to avoid it sticking. Put aside.

Make the cheesesteak mixture.

In a big frying pan, warm up 1 tablespoon of olive oil on medium-high heat.

Put the cut beef, onion, and green pepper. Cook while stirring often until the meat is brown and the vegetables are soft. Add salt and pepper. Put aside.

Prepare the provolone cheese sauce:

In a pot, melt butter on medium heat. Mix flour into the mixture to make a roux. Slowly pour in milk while stirring constantly to avoid clumps.

Keep cooking until the sauce becomes thicker. Lower the heat and mix in shredded provolone cheese until it melts and becomes smooth. Add salt and pepper to taste.

Mix and serve.

Mix the cooked tortellini, cheesesteak filling, and provolone sauce in the pan. Gently mix the tortellini and filling with the sauce until everything is evenly coated.

Heat up the dish and serve right away. Add more provolone on top if you like.
