Creamy Garlic Butter Salmon with Spinach & Mushrooms

Seared salmon fillets are nestled in a luscious garlic butter cream sauce with tender mushrooms and fresh spinach, making every bite absolutely irresistible. Ingredients:
- 2 salmon fillets (about 6 oz each)
- 1 tablespoon olive oil
- 2 tablespoons butter
- 2 cups fresh spinach, loosely packed
- 1 cup mushrooms, sliced (such as cremini or button)
- 3 cloves garlic, minced
- ½ cup heavy cream
- ¼ cup chicken broth (or vegetable broth for a lighter option)
- 1 teaspoon Dijon mustard
- 1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

Instructions:
1. Sear the Salmon
- Heat olive oil in a large pan over medium-high heat.
- Pat the salmon fillets dry with a paper towel, then season both sides with salt and black pepper.
- Place the fillets skin-side down (if using skin-on salmon) and sear for 4 to 5 minutes until golden brown. Flip and cook for another 4 to 5 minutes or until the salmon is opaque and flakes easily with a fork.
- Remove from the pan and set aside.

4. Combine and Serve
- Return the salmon fillets to the pan, spooning the creamy sauce over them.
