Strawberry Cheesecake Trifle

Ingredients:

For the Cream Cheese Filling:

  • 2 8-oz packs of cream cheese
  • 2 cups powdered sugar
  • 1 ½ teaspoons almond extract
  • 1 teaspoon vanilla extract

For the Whipped Cream:

  • 1 pint whipped cream
  • 6 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

For the Rest:

  • 1 angel food cake
  • 4 cups fresh raspberries mixed with thinly sliced strawberries (you can use any berries you want)

Preparation:

  1. Allow the cream cheese to mellow at room temperature and place it in a bowl.
  2. Add powdered sugar, almond extract, and vanilla, and mix until smooth.
  3. In a separate bowl, whip the whipped cream, powdered sugar, and vanilla until solid peaks form.
  4. Assemble the trifle by placing a layer or broken pieces of angel food cake at the bottom of a serving dish, followed by a spread of the cream cheese mixture.
  5. Top the cream cheese layer with berries, then spread the whipped cream over the berries.
  6. Repeat the layers and finish with whipped cream on top, garnished with raspberries.
  7. Allow it to rest in the refrigerator for at least 2 hours. (The longer it sits, the better it tastes, so ideally make it the night before.)
  8. Serve chilled by scooping it into dessert glasses.
