Ingredients:
1 cup cornmeal
1 cup all-purpose flour
¼ cup sugar
1 tbsp baking powder
½ tsp salt
1 cup buttermilk
2 large eggs
¼ cup melted butter
2 jalapeños, diced
1 tbsp honey (for drizzle)
1 tsp lime zest (for drizzle)
2 tbsp lime juice (for drizzle)
Instructions:
Preheat oven to 400°F and grease a baking pan.
Mix cornmeal, flour, sugar, baking powder, and salt in a bowl.
In a separate bowl, whisk buttermilk, eggs, and melted butter, then combine with dry ingredients.
Stir in diced jalapeños and pour batter into the pan.
Bake for 20-25 minutes until golden.
Mix honey, lime zest, and lime juice, and drizzle over warm cornbread.
