Ingredients:

  • 1 pound (450g) boneless, skinless white fish (such as tilapia, cod, or halibut)
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped red onion
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 2 Roma tomatoes, sliced
  • 1 lemon, sliced

Directions:

  1. Preheat oven to 400°F (200°C).
