Ingredients:
- 1 pound (450g) boneless, skinless white fish (such as tilapia, cod, or halibut)
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped red onion
- 2 cloves garlic, minced
- 1/4 cup chopped parsley
- 2 Roma tomatoes, sliced
- 1 lemon, sliced
Directions:
- Preheat oven to 400°F (200°C).
- Season the fish with salt and pepper.
- Heat the olive oil in a large skillet over medium heat. Add the fish and cook for 2-3 minutes per side, or until golden brown.
- Transfer the fish to a greased baking dish.
- Scatter the red onion, garlic, parsley, tomatoes, and lemon slices over the fish.
- Bake for 15-20 minutes, or until the fish is cooked through.
- Serve immediately with your favorite sides.
