Ingredients:
- 6 bell peppers (any color)
- 1 pound ground beef
- 1/2 cup chopped onion
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1/2 cup uncooked rice
- 1 (15 ounce) can tomato sauce
- 1/2 cup water
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
Directions:
- Prepare the peppers: Cut the tops off the peppers and remove the seeds and ribs. Set aside.
- Cook the meat and vegetables: In a large skillet over medium heat, brown the ground beef, onion, green pepper, and red pepper. Drain off any excess fat.
- Combine the filling: Stir in the rice, tomato sauce, water, chili powder, salt, and black pepper. Bring to a simmer and cook for 5 minutes, or until the rice is tender.
- Stuff the peppers: Fill each pepper with the meat mixture.
- Bake: Place the stuffed peppers in a baking dish. Bake at 375°F (190°C) for 30-35 minutes, or until the peppers are tender and the filling is cooked through.
- Top with cheese: Sprinkle the cheddar cheese over the peppers and bake for an additional 5 minutes, or until the cheese is melted.
- Serve: Serve the stuffed peppers hot.
