Quick Oat Bread for Breakfast

This healthy and quick oat bread is perfect for a nutritious breakfast! Packed with fiber from oats and natural sweetness from pumpkin and dried fruits, this easy-to-make bread is soft, moist, and full of flavor. Enjoy it fresh out of the oven or toasted with your favorite spread!


Ingredients:

  • 1 cup oatmeal
  • 1 glass of slightly warm water (approximately 200-250 ml)
  • ½ pumpkin (about 400g, peeled and grated)
  • 1 tablespoon sweetener (honey, maple syrup, or stevia – optional)
  • 1 teaspoon cinnamon (optional, for extra flavor)
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1 tablespoon vegetable oil (coconut oil or olive oil works well)
  • 1 tablespoon sesame seeds
  • ¼ cup dried apricots, soaked and chopped
  • 1 tablespoon chia seeds
  • ¼ cup chopped nuts (walnuts, almonds, or hazelnuts)
  • ¼ cup mixed seeds, nuts, and dried fruits

Instructions:

Step 1: Soak the Oats

In a large bowl, combine the oats with warm water. Let them sit for 10 minutes so the oats can absorb the liquid and soften.

Step 2: Prepare the Pumpkin

Peel and cut half of a pumpkin into small pieces. Grate the pumpkin using a fine grater and set it aside.

Step 3: Combine the Ingredients

  • Once the oats have absorbed the water, add the grated pumpkin, sweetener, cinnamon, salt, oil, and sesame seeds to the bowl.
  • Mix well until everything is evenly incorporated.

Step 4: Add Fruits, Nuts, and Seeds

  • Soak the dried apricots in hot water for 5 minutes, then drain and chop them into small pieces.
  • Add the chopped apricots to the mixture along with chia seeds, chopped nuts, and the seed/nut/dried fruit mix.
  • Stir everything together.

Step 5: Add Baking Powder

  • Sprinkle in the baking powder and mix until well combined.

Step 6: Shape and Bake the Bread

  • Line a baking pan with parchment paper.
  • Pour the mixture into the pan, spreading it evenly.
  • Preheat your oven to 350°F (175°C).
  • Bake for 35-40 minutes, or until the bread is firm and golden brown on top.
