Hobo Casserole: Rustic Campfire Beef and Potato Delight

Hearty Campfire Casserole Recipe

Ingredients:

1 lb lean ground beef

1 small yellow onion, diced

4 medium russet potatoes, peeled and sliced

8 oz cheddar cheese, grated

1 (10 oz) can cream of chicken soup

1 (10 oz) can cream of potato soup

1 teaspoon Worcestershire sauce

¼ cup milk

1 teaspoon Creole seasoning

⅓ cup crispy French fried onions

Salt and pepper to taste

Directions:

1. Preheat Oven: Preheat your oven to 375°F (190°C).

2. Cook Beef: In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onions are translucent. Drain any excess fat.

3. Prepare Sauce: In a bowl, mix the cream of chicken soup, cream of potato soup, Worcestershire sauce, milk, Creole seasoning, and a pinch of salt and pepper. Stir until well combined.

4. Layer Ingredients:

In a greased 9×13-inch casserole dish, layer half of the sliced potatoes.

Spread half of the cooked beef mixture on top of the potatoes.

Pour half of the soup mixture over the beef.

Sprinkle with half of the grated cheese.

Repeat the layers with the remaining ingredients, ending with cheese on top.

 

5. Bake: Cover the dish with aluminum foil and bake for 45 minutes.

6. Add Topping: Remove the foil, sprinkle the crispy French fried onions over the top, and bake for an additional 10-15 minutes, or until the potatoes are tender and the cheese is bubbly.

7. Serve: Allow the casserole to rest for 5 minutes before serving.
