Mexican Taco Lasagna

Mexican Taco Lasagna is a delightful fusion of two beloved dishes: tacos and lasagna. It combines layers of tortillas, seasoned ground beef, beans, cheese, and other toppings for a flavorful and hearty meal.

Ingredients:

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning mix
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn kernels, drained
  • 1 can (15 ounces) diced tomatoes, drained
  • 1 cup salsa
  • 12 corn tortillas
  • 2 cups shredded Mexican cheese blend
  • Optional toppings: sliced jalapeños, chopped cilantro, diced avocado, sour cream, etc.

 

 

Instructions:

Preheat the oven: Preheat your oven to 350°F (175°C).

Prepare the beef mixture: In a large skillet, cook the ground beef over medium heat until it’s browned. Add chopped onions and minced garlic, and cook until the onions are softened. Drain any excess fat. Stir in the taco seasoning mix, black beans, corn, diced tomatoes, and salsa. Let the mixture simmer for about 5 minutes.

Assemble the lasagna: In a 9×13 inch baking dish, spread a thin layer of the beef mixture on the bottom. Layer 4 corn tortillas on top, overlapping slightly to cover the bottom of the dish. Spread half of the remaining beef mixture over the tortillas, then sprinkle with 1 cup of shredded cheese. Repeat the layers with the remaining tortillas, beef mixture, and cheese.

 

 

Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until heated through and the cheese is melted and bubbly.

Serve: Let the Mexican Taco Lasagna cool for a few minutes before slicing and serving. Top with your favorite toppings such as sliced jalapeños, chopped cilantro, diced avocado, or sour cream.
